Taco Soup

The weather outside is no longer frightful but we did receive some snow this week. Since it is still chilly outside, I'd like to share one of my family's favorite recipes, for taco soup. This recipe is super simple and guests love it at parties, too! The recipe is from Weight Watchers so it's nice and healthy!


15 oz canned pinto beans
15 oz canned kidney beans
15 oz canned black beans
14 1/2 oz canned tomatoes
15 oz canned corn
28 oz crushed tomatoes
16 oz uncooked 95% lean ground beef (turkey works great, too!)
1 cup of uncooked onion
7 oz green chillies  
1 packet of taco seasoning
1 packet of ranch seasoning

Cook the ground beef in a large pot and add chopped onions half way through. Once brown, drain any fat from ground beef and add the taco seasoning. Add beans (all of them), after draining off water. Add tomatoes, yellow corn, crushed tomatoes and chili peppers. Add water to the consistency that you want (2 cups makes it more soupy). Adding less water makes it thicker. Add the powder ranch seasoning. Stir all ingredients together and simmer for 10-15 minutes.
